The Elder is a common shrub of hedges and roadsides, in flower during May and June. The flowers are in umbels, creamy white, sweet smelling and used to make delicious cordial, pop or wines. Elderflower cordial is quick and easy to make as follows : Collect about 25 elderflowers and shake vigourosly to remove any small insects. Place in a bowl containing about 3 pints of water, 3 pounds of sugar, 5 teaspoons of citric or tartaric acid and 2 sliced, unwaxed lemons or limes. Stir well to dissolve the sugar and leave for 24 hours. Stir occasionally and squeeze the juice out of the citrus fruit. Strain through a jelly bag into bottles. Dilute to taste.
Do not confuse the elder with umbelliferous wild flowers - many of which are extremely poisonous!
